This is delicate and light and goes well with any meal that has cheeses and heavy creams like my Creamy Crab Filled Shells with Seasoned Béchamel Sauce. The crisp mildly baked and warmed apples mixed with a buttery biscuit add the rich gooey flavors of cinnamon and top that all off with the coolness of the freshly made ice cream and fluffy white chocolate mousse????? You will be in HEAVEN. This is such a nice dessert.
I came up with this dessert after watching videos of my good and dear friend Gretchen Price. She has a blog at http://www.gretchensbakery.com/ I like to make other ideas with some of her recipes from time to time. This is definitely one of them. It uses 4 recipes of hers but I, of course, put my twist on them and add a few together that would complement each other. 🙂 Please Note Gretchen is rebuilding her web site and these recipes are not available yet once they are available I will post those links 🙂 thanks if you need them please post below on this post and I will write them out for you or email you the steps for each one 🙂
What You Will Need:
Microwave safe Container (To Warm the Honey)
1 Medium Sauce Pan (the one the apples were made in)
Ice Cream Maker – or you can purchase already made ice-cream but Homemade is the BEST
Follow Gretchen’s Recipes except for where I place my spin on them and the amounts below.

- ¼ Cup Rum
- Make this 1 day ahead Vanilla Ice Cream http://www.woodlandbakeryblog.com/vanillaicecream/
- ½ Recipe – Have made and cooled Shortcakes http://www.woodlandbakeryblog.com/strawberry-shortcakes/
- ½ Recipe and made 1 day ahead Chocolate Mousse http://www.woodlandbakeryblog.com/white-chocolate-mousse/
- 2 Cups Fresh Honey Warmed
Makes 4-5 servings. Depending on the size of your biscuits.
Have all the recipes above ready to go, have your mousse in the refrigerator your ice cream in the freezer, and shortcakes cooled.
As for the Apples you are going to follow everything she shows you up to the point after adding the apples to the syrup. Place the pot back on low/medium heat add the Rum and stir in with wooden spoon.
Cook the apples in the sauce until they are fork tender but still have a bit of crisp. Keep stirring them so they do not stick and burn on the bottom of the pan. It should take about 10-15 minutes for them to be done. Turn off heat until you are ready to serve your dessert.
Time for Dessert? Heat your Rum Apple topping until warm and the syrup is loose
Once the Apples are ready it is time to assemble your dessert.
Place your honey in the microwave safe container and heat until warmed 1-3 minutes and stir.
Place a spoonful of the rum apple topping syrup on your dessert plate
Place one biscuit on top of the syrup
Spoon on a nice amount of the rum apple topping on top of the biscuit
Place one LARGE scoop of Ice Cream on your plate as shown
Place one large dollop of the white chocolate mousse on top of the rum apple topping
Drizzle with a spoon your warmed honey over everything and serve OH MY GOD YUM!!! 🙂
