If you like yours with more large chunks of avocado in it then great just process it a shorter amount of time also place them in last – but if you want it creamier?? Then process them longer in the beginning like I show you here.
Creamier version is excellent for sandwich wraps or as a condiment for tostadas or even burgers so it does not only just go on a chip. Though that is very good too 🙂
I always make two kinds one with heat and one without so if you are going to do the same, double this recipe and add the extra ingredients to the second batch – not everyone likes heat
Great for large parties but be sure to make it just before serving for the best taste and quality.
Cut and de-seed a few pieces of jalapeños and you just added some heat or you can get hot
Ro-tel (remove the juices before adding) that will add just the right amount of heat.
What You Will Need:
Food Processor with S-Blade
Strainer (if using Ro-tel )
Can Opener (if using Ro-tel)
Decorative Bowl (for serving)
This will make 2 cups
- 3 Avocados
- 1 Fresh Roma Tomatoe Rough Chopped (I use Roma’s that are very firm)
- 1 ½ Cup Rough Chopped White Onion (that is 1 inch thick slice of the white onion)
- 1 ½ Teaspoon Sea Salt
- 1 Teaspoon Pepper
- ¼ Teaspoon Lemon Juice (fresh is best but bottled is ok too)
- If desired – 2 slices of Jalapeños (Optional) WITHOUT SEEDS Flesh only!!!!! Add more if you prefer more heat
- ¼ Cup Hot Ro-tel (remove the juices and add to preferred taste)
If using Ro-tel Tomatoes, open can and place in strainer to remove juices. Let drain while preparing the rest.
Using your paring knife, with washed Roma tomatoes-cut in half and then two more times per side for easy adding to processor, do the same with white onion. Place aside.
Use paring knife cut into the avocado until you feel the seed, turn the avocado so the knife does the work of making two half pieces keeping the knife resting on the seed on the inside. Remove the knife and grab both sides and twist them apart from each other. You now have two halves. Peel off the outside skin, pull out the seed and place in processor.
Add the lemon juice, salt and pepper. As shown above – Process a few times. Place in the onions and process once, add the tomatoes and process once. If you are adding jalapeños or Ro-tel now is the time you add those. And process until desired creaminess.
If you are using Ro-tel tomatoes remember you may not need to add fresh tomatoes if you plan to use more then ¼ cup so do not add fresh if using more Ro-tel.
For a milder taste use fresh tomatoes.
Taste and add more salt and pepper if needed to your own personal tastes
If making a chunkier version, Process onions and fresh tomatoes first then add seasonings before adding avocados. If using jalapeños or Ro-tel add it also before adding avocados,
Add avocados and pulse until desired thickness and chunks.
Place in serving dish and serve with oven warmed chips or my Frying Tortilla Chips
